I promised my readers more purple and here it is.
An edible purple fruit, eggplant. Call it a vegetable if you must.
I got three small plants from the same source in June.
All three have been producing fruit for months.
This is the biggest plant. It is sprawled out like a large shrub.
I have had to prop up its limbs to keep the fruit off the ground.
With all this eggplant, I have had to get creative with recipes.
Eggplant Parmesan, eggplant lasagna, eggplant sauce on spaghetti-squash, eggplant casserole, ratatouille…
Still the eggplants keep coming…and it’s October.
I wonder how eggplant would taste with pumpkin spice?

You have had much better luck with growing eggplant than I did with mine. I got a mere 4 small eggplants this season.

I thought of you while writing this post. I said to myself, Surreyfarms would show the eggplant dishes on lovely plates. Probably purple. Ha.

These eggplants did the best of any plants in our gardens. I have had to start hiding them in recipes. Too much of a good thing…

Beautiful Aubergines. Roast them with tomatoes,peppers, onion, garlic and herbs for pizza sauce.

I love (what we call) aubergines. My favourite is ‘Melanzane parmigiana’ where the aubergine goes all silky and unctuous…mmm.

Wow, what a harvest. I have never grown these Aubergines /Egg plants as yet, but my daughter has had some success.. These look very healthy and yummy… 🙂
